(Badam Khajhur ladoo) 

Ingredients: 
• 1 cup soaked almonds (peeled) 
• 8–10 chopped dates 
• 1 tsp cardamom powder 
• A few saffron strands 

Instructions: 

  1. Blend soaked almonds and chopped dates in a food processor until you get a sticky, coarse mix.
  2. Add cardamom powder and saffron; blend again lightly.
  3. Press the mixture into a small tray lined with parchment paper.
  4. Chill for 1 hour, then cut into squares or bars.
  5. Wrap them individually in butter paper or decorative foil for gifting. 

For Badam Khajur Ladoos - just grease your palm and a plate with some ghee, make small balls of the mix by rolling between your palms, place on the greased tray or plate, refrigerate for 30 mins before you pack in a box.

To make this into Kaaju Nariyal Barfi place the mix in a flat tray greased with ghee, flatten it evenly, cut with a knife diagonally to make diamond or Barfi shape, refrigerate 30 mins and remove from the tray before serving.

• Salt to taste 

Instructions:

  3. Toss the spice mix into the nuts and mix well with a sprinkle of salt.
  4. Let it cool completely and pack into festive glass jars or pouches.
